Scallion Oil Noodles (Vegan Recipe)

Scallion Oil Noodles—these noodles are super simple to make and so comforting! They’re also really fragrant from cooking the scallions over low heat in oil since it releases all the flavour! These are inspired by the scallion noodles I love to order from a Chinese hand-pulled noodle restaurant!

I’ve made these noodles and enjoyed them once as is, and the other time with some sautéed mushrooms and bok choy!

I used mushroom soy sauce for the darker brown colour. It's totally optional but I also highly recommend it since it all adds an extra umami flavour to the noodles!

I made the scallion oil first before adding in the noodles and seasoning it with some sugar and soy sauce.

Here's how I cooked down the scallions:

I didn't have fresh wheat noodles so I used dried noodles for these! I cooked the noodles and then added them directly to the scallion oil and seasoned with soy sauce.

Get the recipe below. Hope you enjoy it!
